Two Bite Delights

butter or margarine, softened

finely chopped meat or seafood

half-and-half

medium green onions, thinly sliced (2 tablespoons)

ground red pepper (cayenne) or your favorite rub

cup

shredded cheese of your choice

Heat oven to 375°F. Generously grease 24 mini (1 3/4x1-inch) muffin cups with shortening or cooking spray.

In small bowl, stir Bisquick mix and butter until blended. Add boiling water; stir vigorously until soft dough forms. Press rounded teaspoonful of dough on bottom and up side of each muffin cup. Divide meat evenly among muffin cups.

In small bowl, beat half-and-half and egg until well blended. Stir in onions, salt and red pepper. Spoon 1 1/2 teaspoons egg mixture into each muffin cup. Sprinkle cheese over tops.

Bake about 20 minutes ( about 35 minutes in the smoker ) or until edges are golden brown and centers are set.

Serve with your favorite dipping sauces

Cover; refrigerate any remaining appetizers. Leftovers re-heat very well. If you have any.

Tips

Vary the cheese you use for different flavors. Cheddar and pepper Jack are great choices

Use different meats and seafood. Chopped beef, bacon, ham, pulled pork, pulled chicken, crab, shrimp

Crust can be also be made from pie dough, pizza dough, phillo, or pastry dough. They all work good.
