Smoked Shrimp with Smokey Tomato Sauce

stick butter

clove gralic - minced

large tomatoes - diced or 1 can ( 28oz ) diced tomatoes

diced Jalapeno pepper

tomatoe paste

dry white wine

crushed oregano

bay leaves

crushed red pepper to taste

large raw shrimp

crumpled Feta Cheese

chopped Parsley or oregano for topping on melted cheese

Salt to taste

Heat butter in a large skillet-add garlic & and saute over med-high heat until tender ( about 5 min )

Add tomatoes, tomato paste, wine, oregano, bay leaves, white pepper, Jalapeno pepper, and red pepper. Mix well and place in smoker at 250*, stir every 30 minutes and cook until slightly thickened. ( about 2 hours ) adjust salt now, before adding shrimp

Remove Bay leaves and add shrimp, just lay on top, don't stir in. Put back in smoker and cook til shrimp are done. ( turn opaque )

When shrimp are done,sprinkle Feta cheese and parsely on top and put back in smoker and let cheese soften and slightly melt.

Tips

This recipe can be done equally well on the stove top or in the oven, you just won't get that great smokey flavor.

Serve over rice or pasta - we like to use orzo
