Smoked Scotch Eggs

Pork sausage

Hard-boiled eggs

Your favorite seasoning or BBQ rub

Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.

Divide the sausage into 4 equal size pieces

Flatten the sausage pieces and make a patty to surround each egg. Form the patty evenly around the egg.

Now coat the outside of the outside of the formed eggs with your favorite seasoning or BBQ rub

Place on a rack in the smoker at 225* until done ( about 1 1/2 hours )

Tips

When these are almost done you can baste with Maple syrup, Honey, or a glaze to add an extra special flavor.

These are great for snacks, appetizers, breakfast, or making a breakfast sandwich.
