Smoked Pork Tenderloin with Spiced Apple Slices

stick unsalted butter

cloves garlic - minced

onions - thinly sliced

apple slices - thinly sliced

Turbino suar

Worcestershire sauce

spiced rum

cinnamon stick broken in half

Melt stick of butter in a 10" saute pan or skillet

Add onions and garlic to melted butter and saute til softened and opaque

Once the onions softened, add sliced apples, pepper spice, Turbino sugar, Worcestershire sauce, 1/2 cup of spiced rum, and a cinnamon stick broken in half. Then let it simmer for a while til it starts to thicken

While the apple mix is simmering, season the tenderloin with grillin' pepper spice

Once thickened take the apples off the stove, place a grill rack on top of pan, then place tenderloin on rack. Now this will go into the smoker ( or oven ) with apple wood at 230* for about 1 hour. I want the meat juices to flavor the apples too.

After about an hour in the smoke, I removed the tenderloin and apples and put it and the apple mix ( remove cinnamon sticks before putting in pouch ) into a double foil pouch to finish cooking. Will take it to 140* internal. Then pull from smoker and wrap in a towel and let it rest on the counter til everything else is ready.

Remove from foil, slice tenderloin, and serve with the spiced apples

Tips

This recipe works equally well done in the oven. Just no smokey flavor.

This recipe also works great using peaches insted of apples.
