medium or large raw shrimp, shelled and deveined

unsalted butter (1 stick)

white wine or vermouth

Put the shrimp on a large plate and season the shrimp with salt and pepper

Heat a large skillet over medium heat and add the butter to the skillet to melt

When the butter is melted and and foaming has subsided add garlic and parsley and cook til softened but not brown

Add lemon juice, wine or vermouth and simmer for a couple minutes

Add shrimp and sauté quickly stirring until tender ( turn pink ), about 4 to 6 minutes. Do not over cook or shrimp will be tough.

Divide the shrimp among 4 plates, 4 shallow ramekins, or arrange on a platter. Pour sauce over shrimp, garnish, and serve.

Tips

To do this recipe in the oven, Melt the butter in a shallow baking dish, baking pan, or shallow ramekins. When the butter has melted, add the rest of the ingredients to dish and stir well. Then arrange the shrimp ( coat each side of the shrimp with the mixture ) in the dish or baking pan. Broil about 4 minutes or bake at 450 degrees for 4 to 7 minutes.

This recipe works equally well using scallops instead of shrimp or using a combination of shrimp and scallops.

Recipe works great as a side dish, main dish, or served over pasta.
