Jim's Chili Sauce

diced tomatoes, undrained

garlic, peeled and minced

chipotle chilli powder OR cayenne pepper, a poor substitute

dark brown sugar

jalapeño pepper - (to 2), seeded, and chopped

In a heavy-bottomed saucepan, combine all ingredients.

Bring mixture to a boil, then reduce heat and simmer uncovered for 1 hour
|

Taste and adjust salt if needed
|

Let mixture cool slightly, then pour into a blender or food processor, you can blend from chunky to smooth depending on what you are using the sauce for.

Now pour the blended mixture back into the sauce pan and simmer until thickened to the consistency you want. I like smooth sauce to be thicker than chunky sauce. Approximately 30 minutes.

Let mixture cool down, then refrigerate for a couple hours before serving.

Tips
Sauce will keep in refrigerator for around a month or mixture may be canned.
