Slices bacon

ground beef or chopped brisket

pork sausage or pulled pork

tomato catsup

Jalapeño peppers-diced

chopped onion

chopped bell pepper

Tabasco sauce

cajun spice blend or BBq rub

Worcestershire Sauce

light brown sugar

Cans baked beans--28 oz. cans

Optional Addition:

small can pineapple chunks or sliced peaches - opt. - I cut the sliced peaches into chunks and cut the pineapple chunks smaller

In a large skillet fry bacon til crisp. Remove bacon and set aside. Reserve grease.

Saute onions and peppers in bacon grease until tender. pour into a bowl and set aside. In same skillet brown ground beef and pork sausage. When done remove and drain off grease.

In a large covered baking dish add all ingredients except bacon and mix well.

Bake at 350* for 30 min. with cover on-stir several times during baking

Remove cover and crumple bacon over top of mixture-Do not stir in.

Place dish back in oven -- uncovered -- bake for 10 min. more

Tips

I don't usually bake these beans. I slow cook them in a pot on the stove top or put them in a pan and cook them in the smoker under the pork or beef and let the juices drip into the beans.
