Grilled Shrimp Kebabs

large shrimp, peeled and deveined

green, red or yellow pepper, cleaned, seeded,

and cut into 1 1/2" squares

zucchini squash, cut 1 1/2" pieces

2

onions, cut into chunks

can pineapple chunks

vegetable or olive oil

soy sauce

honey

Alternate shrimp, onion, pepper, squash and pineapple on skewers.

Mix pineapple juice, oil, soy sauce, honey and ginger together and brush onto kebabs.

Grill over a moderate heat for approximately 10 minutes. Rotate kebabs once and use any remaining sauce to baste kebabs.

Serve with lemon wedges and wild rice.

Yield: 6 to 8 kebabs

Tips

Cherry tomatoes or other vegetables can be substituted for the onions or peppers if desired.
