Grilled Peaches

SAUCE:

(1 stick) unsalted butter, melted

firmly packed light brown sugar

white rum or Amaretto

SEASONING MIXTURE:

firmly packed light brown sugar

1/2

tsp

ground cinnamon

1/4

tsp

allspice

1/4

tsp

cayenne pepper

tsp

kosher salt

Peaches

Lemon juice...per half of peach

unsalted butter balls...as many as needed

scoop

Vanilla ice cream per peach half

MAKE THE SAUCE:

In a small sauce pan, melt 1 stick of butter over medium heat.

When butter is melted, add 1/3 cup white rum or Amaretto and 1/3 cup firmly packed light brown sugar.

Do not add the honey...that comes later.

Stir until sugar is melted and mixture is hot.

Turn down heat and keep warm.

MAKE THE SEASONING MIXTURE:

In a small bowl, add all the ingredients of the Seasoning Mixture.

Mix well and set aside for later use.

PREPARE THE GRILL:

You need to set-up your grill with one side for direct grilling and the other side for indirect grilling.

Pre-heat your grill on the direct grilling side to a med-high heat.

While the grill is heating up prep the peaches.

PREPPING THE PEACHES:

Wash the peaches and pat dry with a paper towel

Slice the peach in half and remove the pit

Sprinkle each peach half with 1/2 tsp Lemon juice.

Place on a plate meat side down ( pit side )

GRILLING THE PEACHES:

Once the grill is up to heat, on the direct heat side of the grill, place the peach halves meat side down ( skin side up ) onto the grill.

We want grill them for 3 to 4 minutes ( depending on the heat of your grill ) to get a couple grill marks and caramelize the face of the peach.

While the peaches are grilling meat side down, baste the skin side with the warmed sauce you made earlier. Set the sauce pan on the indirect side of the grill to keep warm.

Watch the peaches closely, we don't want them to burn, only caramelize and leave some marks.

Now turn the peaches over and place them skin-side down on the indirect side of the grill.

Sprinkle the faces of the peaches liberally with the Seasoning Mixture you made earlier.

Now place the butter-ball into the hole where the pit was removed.

Cook them for indirect for about 4 to 6 minutes, til the seasoning and butter has melted into the peach and the peach has softened. The juices will bubble from the peach between the skin and the meat.

While the peaches are finishing grilling, move the sauce in the pan to the direct side of the grill and add the honey and any leftover Seasoning mixture to the sauce. Stir and let it reduce and thicken. It will thicken a little more as it starts to cool when taken off the heat.

When the peaches are done, remove the peaches and sauce from the grill and place each peach half in a small bowl.

Now put a scoop of Vanilla ice cream into the hole where the pit was removed and drizzle the thicken sauce over the peach and ice cream.
