Large whole fresh mushrooms--remove stems-chop & save

Tblsp olive oil

Stick butter

Bunch scallions--chopped

Whole onion--finely chopped

Cans crabmeat--drained--reserve liquid ( opt )

seasoned bread crumbs

chopped parsley for garnish

Heat oil and butter in a large saute pan

Slowly cook garlic, shallots, and scallions until tender then add the chopped mushroom stems, crabmeat ,and chopped herbs. Cook this for awhile until the mushrooms have yielded some liquid, add the bread crumbs and mix well, add the reserved liquid from the crabmeat little at a time until you have a good consistency for stuffing the mushrooms.

Spray pan with olive oil.

Stuff mushrooms with mix.

Bake at 350* for about 20 min. in the oven, about 20 min. on the grill cooked indirect, or about 30-35 min. in the smoker

Tips

Ladle with cream sauce then sprinkle with chopped parsley and Parmesan cheese and serve.
