Start Here If Using Fresh Green Beans

First wash and trim the ends off all the beans. Then cut into bite-size pieces.

Bring a couple of quarts of water with a couple tablespoons of salt to a boil. Once the water is boiling, add the beans and bring it back to a boil.

Once the beans have boiled for about 7-10 minutes, test one to see if it's tender but still firm. Don't overcook. As soon as the beans are tender but still a little firm, drain and rinse them in cold water to stop the cooking process.

In a large skillet; cook bacon over medium-high heat, turning occasionally, until evenly browned and crisp. When done, remove from skillet and set aside for later

You will need at least 3 to 4 Tbs. of drippings, if your bacon didn’t produce this much, add some bacon grease, lard, butter or oil oil to make up the difference.

Sauté the onions in the bacon grease until they just start to brown, then add the garlic and cook for 1 minute more.

Then add the beans, sugar, and bacon to the skillet
|

Toss a few times to make sure all the beans are coated with fat, and keep stirring over medium heat, salt and pepper to taste.

Continue to cook over medium-high heat until green beans soften and start to caramelize.

Place in a large bowl and serve.
