Wash, remove stems and half jalapeno's lengthwise ( half-shell or boat style ). Only cut the stem off, don't cut the end of jalapeno off to remove the stem.

Remove seeds and veins

Fill the pepper halves with your favorite cheese or meat filling. I used cream cheese with pineapple and brisket for these.

Wrap the filled pepper half with a strip of thin sliced bacon and dust with your favorite rub.

5

They are now ready for the grill or smoker.

6

You can grill them indirect ( about 30 minutes or until bacon is done ) or put them in the smoker ( about 1 to 1 1/2 hours or until bacon is done).

Tips

Basically, an ABT is a stuffed pepper, usually a jalapeno wrapped in bacon.

Fillings can be as simple as cream cheese, or as fancy as you want them to be. You could use, turkey, fajita meat, sausage, chicken, Li’l Smokies, brisket, pulled pork, shrimp, crab meat, and various flavors of cheese. The combinations and possibilities are endless. It comes down to what you like.
